- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Add the chicken and cook until golden brown on both sides (about 6-7 minutes per side). Remove from skillet and set aside.
- In the same skillet, sauté the chopped onion until translucent (about 3-4 minutes). Add minced garlic and sliced mushrooms; cook until mushrooms are tender (about 5 minutes).
- Return the chicken to the skillet. Pour in cream or vegetable broth while stirring to combine with vegetables. Let it simmer for about 5 minutes until slightly thickened.
- Garnish with fresh spinach before serving hot over pasta or rice.
