  • 12 oz fettuccine pasta
  • 1 lb boneless skinless chicken breast, cut into strips
  • 5 slices bacon alternative, chopped
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon black pepper
  • Salt (to taste)
  • 2 cups fresh spinach
  • 1 cup broccoli florets

Instructions

  1. Cook the fettuccine according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a skillet over medium heat, add olive oil and cook the chicken strips until golden brown (about 6-7 minutes). Remove from skillet and set aside.
  3. In the same skillet, sauté garlic for 30 seconds before slowly stirring in heavy cream while whisking continuously.
  4. Add grated Parmesan cheese, black pepper, and salt to the sauce and mix well until creamy. Return the chicken and bacon alternative to the skillet.
  5. Toss in spinach and broccoli; cook for an additional 2-3 minutes until spinach wilts.
  6. Fold in cooked fettuccine until well coated with the sauce.
