Ingredients
- 1 lb boneless, skinless chicken breasts (cut into strips)
- 12 oz pasta shells
- 2 cups heavy cream
- 1 cup Velveeta cheese (cubed)
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 3 tablespoons unsalted butter
- Cajun seasoning (to taste)
Instructions
- Cook the pasta shells in salted boiling water until al dente; drain and set aside.
- In a skillet, melt butter over medium heat. Add chicken strips seasoned with Cajun spices and cook until golden brown; remove from skillet.
- Pour heavy cream into the same skillet, scraping browned bits. Stir in Velveeta, mozzarella, and Parmesan until melted.
- Return the cooked pasta and chicken to the skillet; toss until well-coated with sauce.
- Serve hot, optionally garnished with extra Parmesan.
