- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 cup heavy cream
- 8 oz penne pasta
- Salt and pepper to taste
- Grated Parmesan cheese (for garnish)
- Green onions and parsley (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion and bell peppers until softened.
- Add minced garlic and cook for an additional minute.
- Stir in cubed chicken along with Cajun seasoning and smoked paprika; cook until browned.
- Pour in chicken broth and diced tomatoes; bring to a boil then reduce heat to low.
- Add penne pasta; simmer until tender.
- Mix in heavy cream; simmer for a few more minutes.
- Season with salt and pepper, then serve topped with grated Parmesan cheese, green onions, and parsley.
