  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup plain yogurt
  • 1 tbsp lemon juice
  • 2 tsp ground cumin
  • 2 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • Salt to taste
  • 3 tbsp unsalted butter
  • 1 onion
  • 5 garlic cloves
  • 1 tbsp grated ginger
  • 1 tsp chili powder
  • 1 cup tomato puree
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 tsp sugar (optional)
  • Fresh cilantro for garnish
  • Hand-cut fries (potatoes, oil, salt)

Instructions

  1. Marinate chicken thighs in a mixture of yogurt, lemon juice, ground cumin, garam masala, turmeric, smoked paprika, and salt for at least 30 minutes.
  2. In a large skillet, melt butter over medium heat and brown the marinated chicken for about 6-8 minutes. Remove from skillet.
  3. In the same skillet, sauté chopped onion until translucent, then add minced garlic and ginger, and cook until fragrant.
  4. Stir in tomato puree, return chicken to the pan, and add heavy cream. Season with salt and pepper; simmer for about 15 minutes until thickened.
  5. Serve hot with hand-cut fries and garnish with fresh cilantro.
