- 1 cup cottage cheese (full-fat or low-fat)
- 2 eggs
- 1 cup oat flour (or almond flour)
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon olive oil (optional)
- ½ teaspoon garlic powder or Italian seasoning (optional)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a food processor, blend the cottage cheese until smooth.
- In a mixing bowl, whisk together the eggs and blended cottage cheese.
- Add olive oil (if using), oat flour, baking powder, salt, and any optional seasonings. Mix until well combined.
- Divide the dough into 2-3 portions and roll each into thin oval shapes on floured parchment paper.
- Place the flatbreads on the prepared baking sheet and bake for 15-18 minutes until golden brown.
- Let cool slightly before serving warm.
