- 0.25 cup Parmesan or cheddar cheese (grated, optional, for topping)

Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large bowl, mix together cottage cheese, eggs, salt, and black pepper until well combined.
- Add diced zucchini, chopped red bell pepper, broccoli florets, grated carrot, finely chopped red onion, minced garlic, and dried oregano if desired. Stir until fully incorporated.
- Pour the mixture into the prepared baking dish evenly. Sprinkle grated cheese on top if using.
- Bake for 30-35 minutes until set and golden brown.
- Allow to cool slightly before serving.
