Ingredients
- ¾ cup softened butter
- ⅓ cup granulated sugar
- ⅓ cup brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1½ cups all-purpose flour
- 1½ cups graham cracker crumbs
- 8 oz cream cheese (softened)
- 2½ cups powdered sugar
- 1¼ cups brown sugar for caramel sauce
- ½ cup whipping cream for caramel sauce
- 5 tbsp butter for caramel sauce
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla extract.
- In another bowl, whisk together flour, salt, baking soda, and baking powder. Gradually add this mixture to the creamed mixture until just combined. Fold in 1½ cups crushed graham crackers.
- Scoop dough into balls using a cookie scoop, roll in remaining graham cracker crumbs, and place on prepared sheets. Flatten gently.
- Bake for 8–10 minutes until golden around edges. Cool on wire racks before frosting with cream cheese frosting and drizzling with caramel.
