  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar

  • 2 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1½ cups graham cracker crumbs

  • 2½ cups powdered sugar
  • 1¼ cups brown sugar for caramel sauce
  • ½ cup whipping cream for caramel sauce
  • 5 tbsp butter for caramel sauce

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla extract.
  3. In another bowl, whisk together flour, salt, baking soda, and baking powder. Gradually add this mixture to the creamed mixture until just combined. Fold in 1½ cups crushed graham crackers.
  4. Scoop dough into balls using a cookie scoop, roll in remaining graham cracker crumbs, and place on prepared sheets. Flatten gently.
  5. Bake for 8–10 minutes until golden around edges. Cool on wire racks before frosting with cream cheese frosting and drizzling with caramel.
