Ingredients
- Boneless chicken breast, diced
- Broccoli florets
- Red bell pepper, sliced
- Yellow bell pepper, sliced
- Green beans
- Olive oil or sesame oil
- Garlic, minced
- Soy sauce
- Honey or maple syrup
- Rice vinegar
- Cooked brown rice or wild rice mix
Instructions
- Heat oil in a wok or large skillet over medium-high heat.
- Sauté diced chicken until golden brown and cooked through. Remove from the pan.
- In the same pan, add broccoli florets, sliced red and yellow bell peppers, and green beans. Stir-fry until tender-crisp.
- Add minced garlic, soy sauce, honey (or maple syrup), and rice vinegar. Stir well to coat all ingredients.
- Return the cooked chicken to the pan and toss everything together until well mixed.
- Serve over warm brown rice or wild rice mix.
