Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two greased 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Beat softened butter and sugar until fluffy; add eggs one at a time along with vanilla and coconut extract.
  4. Gradually mix in the dry ingredients and coconut milk until smooth.
  5. Divide batter between the prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. Cool cakes completely before frosting.
  7. For the frosting, beat cream cheese with powdered sugar until smooth and fold in whipped heavy cream.
