Ingredients
- 6 large eggs
- 1 ripe avocado
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- Β½ teaspoon sriracha sauce
- ΒΌ teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons fresh chives (for garnish)
Instructions
- Boil the eggs by placing them in a saucepan, covering them with cold water by 1 inch. Bring to a gentle boil, cover, and remove from heat after 10-12 minutes. Transfer to an ice-water bath.
- Once cooled, peel the eggs and slice them in half lengthwise. Remove yolks and place them in a mixing bowl.
- Add avocado, mayonnaise, mustard, and sriracha to the yolks. Mash until smooth and season with smoked paprika, salt, and pepper.
- Fill the egg whites generously with the mixture using a piping bag or zip-top bag.
- Garnish with smoked paprika and chopped chives before serving.
