  • 1 cup vegetable oil or melted butter
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans, toasted if desired

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two loaf pans or one bundt pan.
  2. In a large bowl, whisk together the vegetable oil (or melted butter), granulated sugar, eggs, vanilla extract, and buttermilk until smooth.
  3. In another bowl, combine all-purpose flour, ground cinnamon, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients into the wet mixture, stirring until just combined; avoid overmixing. Fold in the chopped pecans gently.
  5. Pour the batter into the prepared pan(s) and bake for 45-55 minutes for loaves or 55-65 minutes for bundt until a toothpick comes out clean from the center.
  6. Allow to cool in the pan for about 10-15 minutes before transferring to a wire rack to cool completely.
