For the Banana Bread Base
3 overripe bananas, mashed
4 tablespoons melted vegan butter
¾ cup maple syrup
1 cup unsweetened almond or oat milk
1 teaspoon vanilla extract
1½ teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
¼ teaspoon salt
1½ cups all-purpose flour (regular or gluten-free)
1 cup old-fashioned rolled oats
For the Cinnamon Swirl
4 tablespoons melted vegan butter
⅓ cup light brown sugar
2 tablespoons ground cinnamon
For the Frosting
¾ cup powdered sugar
2 tablespoons melted vegan butter
2 oz vegan cream cheese, softened
Instructions
- Preheat the oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, mix the mashed bananas, melted vegan butter, maple syrup, almond or oat milk, and vanilla extract until smooth.
- Add the baking powder, baking soda, cinnamon, and salt. Stir until well combined.
- Fold in the flour and rolled oats, mixing gently until just combined.
- In a small bowl, prepare the cinnamon swirl by mixing the melted vegan butter, brown sugar, and cinnamon.
- Pour half of the banana bread batter into the prepared loaf pan.
- Spoon half of the cinnamon swirl mixture over the batter and lightly swirl it with a knife.
- Add the remaining batter on top, then drizzle the remaining cinnamon mixture and swirl again gently.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- In a bowl, whisk together the powdered sugar, melted vegan butter, and softened vegan cream cheese until smooth.
- Drizzle the frosting over the cooled banana bread before slicing and serving.
