  • 2 cups all-purpose flour (250g), spooned and leveled
  • 1/2 cup unsweetened cocoa powder (45g), sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dark or semi-sweet chocolate chips (170g)
  • 1 teaspoon coconut or vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the room temperature butter with dark brown sugar and granulated sugar until creamy. Add the egg, vanilla extract, and molasses; mix until fully combined.
  3. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. Gradually fold the dry mixture into the wet mixture until just combined. Gently stir in the chocolate chips with coconut oil.
  5. Using a cookie scoop, portion out the dough onto the prepared baking sheet and roll each ball in granulated sugar before placing it on the sheet.
