- 3/4 cup unsalted butter (170g), room temperature
- 3/4 cup dark brown sugar (150g), packed
- 1/4 cup granulated sugar (50g)
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 tablespoon molasses
- 2 cups all-purpose flour (250g), spooned and leveled
- 1/2 cup unsweetened cocoa powder (45g), sifted
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup dark or semi-sweet chocolate chips (170g)
- 1 teaspoon coconut or vegetable oil
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the room temperature butter with dark brown sugar and granulated sugar until creamy. Add the egg, vanilla extract, and molasses; mix until fully combined.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually fold the dry mixture into the wet mixture until just combined. Gently stir in the chocolate chips with coconut oil.
- Using a cookie scoop, portion out the dough onto the prepared baking sheet and roll each ball in granulated sugar before placing it on the sheet.
- Bake for about 10 minutes or until edges are firm but centers remain soft.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
