Ingredients

  • 5½ cups + 2 tbsp all-purpose flour

  • ½ tsp baking soda
  • ½ tsp cream of tartar
  • 1 cup (2 sticks) room temperature butter
  • 1¼ cups granulated sugar
  • ¾ cup powdered sugar
  • ¾ cup canola oil
  • 1 tsp vanilla extract
  • ½ tsp peppermint extract
  • 2 eggs (room temperature)
  • ¼ cup red jimmies sprinkles
  • 1 cup dark chocolate chips
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, salt, baking soda, and cream of tartar.
  3. In another bowl, cream together butter, granulated sugar, and powdered sugar until light and fluffy.
  4. Mix in canola oil, vanilla extract, peppermint extract, and eggs until combined.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Drop tablespoon-sized balls of dough onto prepared sheets two inches apart.
  7. Bake for about 10 minutes or until edges are lightly golden.
  8. For the ganache, heat cream in a saucepan until simmering; pour over dark chocolate chips and stir until smooth.
  9. Once cookies cool, dip them into ganache or drizzle it on top; finish with sprinkles.
