  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 2 tsp baking powder
  • 2 tsp baking soda

  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee (or hot water)
  • 1 cup orange juice (freshly squeezed, strained)
  • 1 tbsp orange zest
  • ½ cup sugar
  • 2 tbsp cornstarch
  • 3 large egg yolks
  • 2 tbsp unsalted butter
  • 8 oz (225 g) dark chocolate, chopped
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • Fresh orange slices or candied orange peel

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a large bowl, whisk together all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt.
  3. Add eggs, whole milk, vegetable oil, and vanilla extract to dry ingredients; mix until smooth.
  4. Stir in hot coffee (or hot water) until combined; the batter will be thin.
  5. Divide batter evenly into prepared pans and bake for 25–30 minutes, or until a toothpick inserted comes out clean.
  6. Allow cakes to cool completely in their pans before transferring them to a wire rack.
  7. In a saucepan, whisk together sugar, cornstarch, and egg yolks; slowly whisk in orange juice. Cook over medium heat while stirring constantly until thickened.
  8. Remove from heat and stir in orange zest and unsalted butter until smooth. Allow filling to cool completely.
  9. Heat cream until steaming but not boiling. Pour over chopped chocolate and let sit for two minutes before stirring until smooth. Add unsalted butter for shine; let cool slightly before pouring.
  10. Place one cake layer on a serving plate and spread an even layer of orange filling on top. Repeat with the second layer before placing the third layer on top.
  11. Pour ganache over the assembled cake, allowing it to drip down the sides for an elegant finish.
  12. Decorate with fresh orange slices or candied orange peel as desired before serving.
