Ingredients
- ½ cup unsalted butter (or coconut oil), melted
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ⅓ cup unsweetened cocoa powder
- ¾ cup all-purpose flour (or gluten-free blend)
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup dried cherries, chopped (or freeze-dried cherries)
- ½ cup mini chocolate chips (optional)
- ⅓ cup powdered sugar (for rolling)
Instructions
- In a mixing bowl, whisk together melted butter and granulated sugar until combined.
- Beat in eggs one at a time and add vanilla extract until smooth.
- Sift in cocoa powder, flour, baking powder, and salt; fold gently to combine.
- Stir in chopped cherries and optional chocolate chips.
- Chill dough for 1–2 hours covered with plastic wrap.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized balls of dough and roll in powdered sugar to coat.
- Place on prepared trays and bake for 9–11 minutes until the tops are cracked but centers remain soft.
- Cool on trays for 5 minutes before transferring to a wire rack.
