  • 4 slices thick-cut turkey bacon
  • 4 slices sharp cheddar cheese
  • 1 beefsteak tomato
  • ¼ cup neutral oil (vegetable or canola)
  • 2 tsp lime juice
  • 1 chipotle pepper in adobo sauce
  • 4 slices sturdy bread (French, focaccia, or sourdough)

Instructions

  1. Prepare the chipotle mayo by whisking together egg yolk, Dijon mustard, lime juice, honey, salt, and pepper until smooth. Gradually add oil while whisking until emulsified. Stir in smoked paprika and chopped chipotle pepper.
  2. Season chicken breast with salt and pepper, then grill over medium heat for about 4–5 minutes per side until cooked through. Slice to fit the sandwich.
