Ingredients

  • 4 cups shredded Napa cabbage
  • 3 cups chopped Iceberg lettuce
  • 2 ½ cups diced cooked chicken
  • 1 cup julienned carrots
  • 11 oz. drained mandarin oranges
  • ½ cup chow mein noodles
  • 2 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce
  • 2 tablespoons peanut oil (can sub avocado, vegetable, or canola oil)
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic (minced)
  • ¾ teaspoon toasted sesame seed oil
  • ½ teaspoon ground ginger
  • ¼ cup sliced almonds
  • 2 tablespoons toasted sesame seeds

Instructions

  1. Prepare the dressing by combining all dressing ingredients in a jar with a lid. Shake well or blend in a mini food processor. Refrigerate.
  2. In a large bowl or platter, layer the shredded Napa cabbage and chopped Iceberg lettuce. Drizzle with some dressing.
  3. Top with diced chicken, julienned carrots, mandarin oranges, and green onions. Drizzle more dressing over the top.
  4. Finish with crunchy toppings like sliced almonds, chow mein noodles, crispy wonton strips, and toasted sesame seeds.
  5. Serve immediately with any remaining dressing on the side.
