  • 2 bell peppers (sliced)
  • ½ cup hot cherry peppers
  • 4 garlic cloves (minced)
  • ½ cup white apple vinegar
  • 1 cup chicken broth
  • 2 tbsp cherry pepper vinegar
  • 1 tbsp lemon juice
  • Salt and pepper (to taste)

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat oil in a skillet over medium-high heat; sear chicken for 5–7 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, brown sliced sausage for about 4–5 minutes.
  4. Add minced garlic; sauté briefly until fragrant.
  5. Stir in sliced bell peppers and hot cherry peppers; cook until softened (3–4 minutes).
  6. Deglaze the pan with white apple vinegar, scraping up browned bits; reduce by half.
  7. Add chicken broth, cherry pepper vinegar, lemon juice, oregano, salt, and pepper. Stir to combine.
  8. Return chicken to the skillet; cover and simmer for about 20 minutes until tender.
  9. Serve with extra sauce spooned over the top.
