- 2 lbs chicken thighs
- ½ lb Italian sausage (sliced)
- 2 bell peppers (sliced)
- ½ cup hot cherry peppers
- 4 garlic cloves (minced)
- ½ cup white apple vinegar
- 1 cup chicken broth
- 2 tbsp cherry pepper vinegar
- 1 tbsp lemon juice
- Salt and pepper (to taste)
Instructions
- Season chicken thighs with salt and pepper.
- Heat oil in a skillet over medium-high heat; sear chicken for 5–7 minutes per side until golden brown. Remove and set aside.
- In the same skillet, brown sliced sausage for about 4–5 minutes.
- Add minced garlic; sauté briefly until fragrant.
- Stir in sliced bell peppers and hot cherry peppers; cook until softened (3–4 minutes).
- Deglaze the pan with white apple vinegar, scraping up browned bits; reduce by half.
- Add chicken broth, cherry pepper vinegar, lemon juice, oregano, salt, and pepper. Stir to combine.
- Return chicken to the skillet; cover and simmer for about 20 minutes until tender.
- Serve with extra sauce spooned over the top.
