Instructions
- Cook the chicken: Season diced chicken with salt and pepper. Sauté in olive oil over medium heat for about 6-8 minutes until golden brown and fully cooked.
- Prepare the rice and veggies: Cook rice according to package instructions. Slice avocado, cucumber, and tomatoes; drain corn if using canned.
- Assemble the bowl: Place cooked rice in the center of a bowl or plate. Arrange chicken, avocado, mozzarella, corn, cucumber, and tomatoes around the rice. Finish with herbs as desired.
