  • 400g cremini mushrooms, sliced
  • 2 tbsp salted butter
  • 1 tbsp olive oil
  • 125ml mayonnaise
  • 60ml crème fraîche
  • 2 garlic cloves, minced
  • 125ml grated Parmesan cheese
  • 125ml grated Havarti cheese
  • 125ml grated Gruyère cheese
  • 125ml shredded mozzarella cheese
  • 4 slices of sourdough bread

Instructions

  1. Heat the olive oil and butter in a pan over medium-high heat. Sauté the mushrooms with salt and pepper until golden, about 10 minutes.
  2. In a bowl, mix the mayonnaise, crème fraîche, melted butter, garlic, and cheeses.
  3. Toast the sourdough slices until lightly browned on both sides.
  4. Combine the sautéed mushrooms with the cheese mixture and spread onto the toasted bread.
  5. Broil under high heat until the cheese is bubbly and golden, approximately 3–5 minutes.
  6. Serve warm, garnished with extra herbs if desired.
