Ingredients
- 1 cup ripe cherries, pitted and halved
- 2 tablespoons sugar
- 1 cup strong brewed coffee, cooled
- 16 ladyfingers (savoiardi)
- 1 cup heavy cream
- 8 ounces mascarpone cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- In a bowl, combine cherries and sugar; let sit for 15 minutes.
- Prepare coffee and allow it to cool.
- Whip heavy cream until stiff peaks form.
- In another bowl, mix mascarpone with powdered sugar and vanilla until smooth.
- Gently fold whipped cream into the mascarpone mixture.
- Dip ladyfingers in cooled coffee briefly.
- Layer dipped ladyfingers, half of the mascarpone mixture, and half of the cherries in a dish.
- Repeat layers with remaining ingredients.
- Chill for at least 4 hours or overnight before serving.
- Dust with cocoa powder and garnish as desired.
