- 1 jar maraschino cherries (12 ounces), chopped
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 1/2 cup unsalted butter, softened
- 4 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- Optional: 1/2 cup white chocolate melting wafers
Instructions
- Prepare the cherries by draining and chopping them into bite-sized pieces; set aside on paper towels to dry.
- In a bowl, whisk together flour, baking powder, and salt.
- Using a stand mixer, cream the butter and cream cheese until fluffy; add sugar gradually until pale.
- Mix in the egg, almond extract, vanilla extract, and reserved cherry juice until fully combined.
- Gradually add the dry ingredients and mix on low speed; gently fold in chopped cherries.
- Chill the dough for at least one hour before preheating your oven to 375°F (190°C) and preparing a baking sheet with parchment paper.
- Scoop dough onto the sheet and bake for about 10 minutes until golden at the edges; allow to cool on a wire rack.
- For an optional topping, melt white chocolate wafers and drizzle over cooled cookies.
