  • 4 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • Optional: 1/2 cup white chocolate melting wafers

Instructions

  1. Prepare the cherries by draining and chopping them into bite-sized pieces; set aside on paper towels to dry.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Using a stand mixer, cream the butter and cream cheese until fluffy; add sugar gradually until pale.
  4. Mix in the egg, almond extract, vanilla extract, and reserved cherry juice until fully combined.
  5. Gradually add the dry ingredients and mix on low speed; gently fold in chopped cherries.
  6. Chill the dough for at least one hour before preheating your oven to 375°F (190°C) and preparing a baking sheet with parchment paper.
  7. Scoop dough onto the sheet and bake for about 10 minutes until golden at the edges; allow to cool on a wire rack.
  8. For an optional topping, melt white chocolate wafers and drizzle over cooled cookies.
