Cheesy egg toast is a quick and satisfying breakfast made with crisp toasted bread topped with a savory egg and cheese mixture. It’s creamy in the center, golden around the edges, and packed with flavor from fresh herbs and a hint of spice. Perfect for busy mornings or a simple brunch idea.

  • Total Time: 17 minutes
  • Yield: 2 1x

Ingredients

For the Toast Base
2 slices bread

For the Egg Mixture
1 large egg
1/2 cup (2 oz) grated cheese (cheddar, pepper jack, or Gruyere)
1 teaspoon finely chopped fresh herbs (such as thyme or rosemary)
Salt, to taste
Black pepper, to taste
Pinch of cayenne pepper (optional)

Instructions

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Place the bread slices on the prepared baking sheet. Lightly toast them in the oven for about 3 to 4 minutes until just slightly firm but not fully browned.
  • In a small bowl, whisk together the egg, grated cheese, chopped herbs, salt, black pepper, and cayenne pepper if using.
  • Remove the bread from the oven. Using the back of a spoon, gently press down the center of each slice to create a shallow well.
  • Spoon the egg and cheese mixture evenly onto the center of each slice, spreading gently but keeping it mostly within the edges.
  • Return to the oven and bake for 8 to 12 minutes, or until the egg is set and the cheese is melted and lightly golden.
  • Remove from the oven and let cool slightly before serving. Serve warm.
