Ingredients
- 1 bunch celery
- 4 Persian cucumbers
- 1 shallot (minced)
- 1/2 cup chopped fresh parsley
- 1 15-oz can chickpeas (rinsed and drained)
- 1/3 cup raisins
- 1/3 cup roughly chopped pistachios
- 1/4 cup olive oil
- Juice and zest from 1 lemon
- Sea salt and black pepper
Instructions
- Chop the celery into cubes and place in a large mixing bowl.
- Wash the cucumbers, chop them into pieces, and add to the bowl.
- Incorporate minced shallot, chickpeas, raisins, chopped parsley, and pistachios.
- Drizzle with olive oil, add lemon juice and zest, then season with salt and pepper.
- Mix thoroughly before serving or refrigerating.
