- 2 heads romaine lettuce (washed and chopped)
- 3 celery stalks (chopped)
- 1/2 cup red onion (thinly sliced)
- 1 cup sharp cheddar cheese (cubed)
- 2 Gala apples (thinly sliced)
- Freshly cracked black pepper
- 1/4 cup extra virgin olive oil
- 1/2 lemon (juiced)
- 1 tablespoon dijon mustard
- 2 tablespoons red apple vinegar
- 1/2 teaspoon oregano
- 1/8 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, combine romaine lettuce, celery, red onion, cheddar cheese, and apples. Add black pepper to taste and toss well.
- In a mason jar, mix olive oil, lemon juice, dijon mustard, red apple vinegar, oregano, salt, and black pepper. Shake until combined.
- Pour half of the dressing over the salad mixture and toss gently to coat. Adjust dressing to taste.
- Serve immediately or refrigerate in an airtight container for up to 3-4 days.
