Ingredients

  • 2 heads romaine lettuce (washed and chopped)
  • 3 celery stalks (chopped)
  • 1/2 cup red onion (thinly sliced)
  • 1 cup sharp cheddar cheese (cubed)
  • 2 Gala apples (thinly sliced)
  • Freshly cracked black pepper
  • 1/4 cup extra virgin olive oil
  • 1/2 lemon (juiced)
  • 1 tablespoon dijon mustard
  • 2 tablespoons red apple vinegar
  • 1/2 teaspoon oregano
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. In a large mixing bowl, combine romaine lettuce, celery, red onion, cheddar cheese, and apples. Add black pepper to taste and toss well.
  2. In a mason jar, mix olive oil, lemon juice, dijon mustard, red apple vinegar, oregano, salt, and black pepper. Shake until combined.
  3. Pour half of the dressing over the salad mixture and toss gently to coat. Adjust dressing to taste.
  4. Serve immediately or refrigerate in an airtight container for up to 3-4 days.
