  • Sea Salt and Black Pepper, to taste
  • 1 (14.5 ounce) can Diced Tomatoes, undrained
  • 1 tablespoon Tomato Paste
  • 1/2 cup Chicken Broth (or Vegetable Broth)
  • 4 cups Cauliflower Rice (fresh or frozen)
  • 2 tablespoons Soy Sauce (or Tamari/Coconut Aminos)
  • 1 teaspoon Sesame Oil (optional)
  • Fresh Cilantro or Parsley, chopped
  • Lime Wedges (for serving, optional)

Instructions

  1. Prep all ingredients by chopping vegetables and mincing garlic.
  2. Heat olive oil in a large skillet; sauté onion until soft, then add garlic.
  3. Add ground turkey, cooking until no longer pink.
  4. Stir in bell peppers and spices; cook until softened.
  5. Mix in diced tomatoes and chicken broth; simmer for 10 minutes.
  6. Prepare cauliflower rice as per package instructions.
  7. Combine cauliflower rice with the turkey mixture; drizzle soy sauce and toss gently.
  8. Serve hot, garnished with fresh herbs.
