- 1 teaspoon Smoked Paprika
- 1 teaspoon Ground Cumin
- 1/2 teaspoon Dried Oregano
- 1/4 teaspoon Red Pepper Flakes (optional)
- Sea Salt and Black Pepper, to taste
- 1 (14.5 ounce) can Diced Tomatoes, undrained
- 1 tablespoon Tomato Paste
- 1/2 cup Chicken Broth (or Vegetable Broth)
- 4 cups Cauliflower Rice (fresh or frozen)
- 2 tablespoons Soy Sauce (or Tamari/Coconut Aminos)
- 1 teaspoon Sesame Oil (optional)
- Fresh Cilantro or Parsley, chopped
- Lime Wedges (for serving, optional)
Instructions
- Prep all ingredients by chopping vegetables and mincing garlic.
- Heat olive oil in a large skillet; sauté onion until soft, then add garlic.
- Add ground turkey, cooking until no longer pink.
- Stir in bell peppers and spices; cook until softened.
- Mix in diced tomatoes and chicken broth; simmer for 10 minutes.
- Prepare cauliflower rice as per package instructions.
- Combine cauliflower rice with the turkey mixture; drizzle soy sauce and toss gently.
- Serve hot, garnished with fresh herbs.
