  • 1 cup Long-Grain White Rice
  • 1 Red Bell Pepper (diced)
  • 1 Green Bell Pepper (diced)
  • 1 medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 1 ½ cups Chicken Broth
  • 2 tbsp Cajun Seasoning
  • Olive Oil

Instructions

  1. In a large skillet over medium heat, add olive oil. Once hot, add sliced smoked sausage and cook until browned for about 5 minutes.
  2. Add diced onions, red bell pepper, green bell pepper, and minced garlic to the skillet. Sauté until softened, about 4-5 minutes.
  3. Stir in rinsed rice and chicken broth. Add Cajun seasoning along with salt and pepper to taste. Bring to a boil.
  4. Reduce heat to low, cover the skillet with a lid, and let simmer for about 15-20 minutes or until rice is cooked through.
  5. Fluff the rice with a fork before serving. Garnish with fresh herbs if desired.
