Ingredients
- 12 oz Smoked Sausage (such as turkey kielbasa or chicken Andouille)
- 1 cup Long-Grain White Rice
- 1 Red Bell Pepper (diced)
- 1 Green Bell Pepper (diced)
- 1 medium Onion (diced)
- 3 cloves Garlic (minced)
- 1 ½ cups Chicken Broth
- 2 tbsp Cajun Seasoning
- Olive Oil
Instructions
- In a large skillet over medium heat, add olive oil. Once hot, add sliced smoked sausage and cook until browned for about 5 minutes.
- Add diced onions, red bell pepper, green bell pepper, and minced garlic to the skillet. Sauté until softened, about 4-5 minutes.
- Stir in rinsed rice and chicken broth. Add Cajun seasoning along with salt and pepper to taste. Bring to a boil.
- Reduce heat to low, cover the skillet with a lid, and let simmer for about 15-20 minutes or until rice is cooked through.
- Fluff the rice with a fork before serving. Garnish with fresh herbs if desired.
