  • 1 lb boneless, skinless chicken breasts
  • 12 oz rotini pasta
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese
  • Cajun seasoning to taste

Instructions

  1. Boil salted water in a large pot. Cook rotini until al dente (9-10 minutes). Reserve ½ cup pasta water; drain.
  2. Season chicken with Cajun seasoning, salt, and pepper.
  3. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Sear chicken for 7-8 minutes until golden brown; add half the minced garlic for flavor.
  4. In the same skillet, reduce heat and melt remaining butter; sauté remaining garlic until fragrant.
  5. Stir in heavy cream and simmer for 2-3 minutes to thicken.
  6. Add mozzarella and Parmesan cheese; stir until melted into a smooth sauce.
  7. Mix in cooked rotini; toss to coat with sauce, adjusting consistency with reserved pasta water as needed.
