Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- 12 oz penne pasta
- 3 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 oz cream cheese, softened
- 1 tsp Cajun seasoning (optional), for extra flavor
- Salt and pepper, to taste
- Chopped parsley, for garnish (optional)
Instructions
- Cook penne pasta in boiling salted water until al dente; drain and set aside.
- Toss chicken pieces with olive oil, Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
- In a skillet over medium-high heat, cook seasoned chicken for 6–8 minutes until golden brown and cooked through; keep warm.
- In the same skillet, melt butter and sauté minced garlic. Add flour to create a roux before slowly whisking in milk and heavy cream until smooth.
- Stir in cream cheese and cheeses until melted and creamy; season with salt and pepper.
- Combine cooked penne and chicken with the sauce; warm together briefly before serving.
