Ingredients
7 cups Rice Chex cereal (or similar corn cereal squares)
1 cup semi-sweet chocolate chips
1/2 cup creamy peanut butter
1/4 cup salted butter
1 teaspoon pure vanilla extract
18 fun-size Butterfinger candy bars (15 crushed, 3 roughly chopped for garnish)
1 1/4 cups powdered sugar, sifted
Instructions
- Place the Rice Chex cereal in a large mixing bowl and set aside.
- Unwrap the Butterfinger bars. Crush 15 bars into small pieces using a rolling pin or food processor. Roughly chop the remaining 3 bars for garnish.
- In a microwave-safe bowl, combine the chocolate chips, peanut butter, and salted butter. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
- Stir in the vanilla extract until well combined.
- Pour the melted chocolate mixture over the cereal. Gently fold with a spatula until all the cereal is evenly coated.
- Add the crushed Butterfinger pieces and gently mix to distribute throughout.
- Transfer the coated cereal into a large zip-top bag or container with a lid. Add the sifted powdered sugar, seal, and shake until evenly coated.
- Spread the mixture onto a parchment-lined baking sheet to cool and set for 15β20 minutes.
- Once set, sprinkle the roughly chopped Butterfinger pieces on top before serving.
