Ingredients
- 1 lb lean ground beef
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 2-3 garlic cloves, minced
- Salt
- Black pepper
- 12 oz romaine lettuce
- 1 cup chopped grape tomatoes
- 1/4 cup diced red onion
- 3/4 cup diced dill pickles
- 2 tbsp light mayo
- 2 tbsp ketchup
- 1 tbsp pickle juice
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Instructions
- In a large skillet over medium heat, add olive oil and sauté diced onion and minced garlic until fragrant.
- Add the lean ground beef to the skillet. Season with salt and black pepper, cooking until browned and fully cooked.
- In a small mixing bowl, combine light mayo, ketchup, pickle juice, onion powder, and garlic powder to create the special sauce dressing. Mix thoroughly and season to taste.
- In a large bowl or individual serving dishes, layer romaine lettuce topped with cooked beef mixture, grape tomatoes, red onion, and dill pickles.
- Drizzle the special sauce dressing over the top and enjoy!
