  • 1 teaspoon baking soda
  • ¾ teaspoon salt (use ½ teaspoon if using salted pistachios)
  • ¾ cup light brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup honey
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups shelled pistachios, raw, unsalted, roughly chopped (reserve ¼ cup for topping, optional)
  • Flaky sea salt, for sprinkling on top (optional, but highly recommended)

Instructions

  1. Melt the butter over medium heat until it foams and becomes clear; cook until golden brown.
  2. Pour the melted butter into a large bowl and let it cool slightly.
  3. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan lined with parchment paper.
  4. In the cooled brown butter bowl, mix sugars until smooth; add eggs one at a time and beat well.
  5. Stir in vanilla extract, then mix in flour, baking soda, and salt until just combined.
  6. Fold in chopped pistachios gently.
  7. Press the dough into the prepared pan; sprinkle with reserved pistachios and sea salt if desired.
  8. Bake for 25-30 minutes until edges are set and lightly golden.
  9. Allow to cool completely before cutting into bars.
