Ingredients
- 2 packages (6 ounces each) fresh raspberries
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/4 cup orange juice
- 2 slices sourdough or French bread
- 2 tablespoons mayonnaise
- 2 ounces Brie cheese (about 4 tablespoons), at room temperature
- 4 slices manchego, white cheddar, or provolone cheese
- Fresh raspberries for garnish
Instructions
- In a small saucepan, combine raspberries, sugar, vanilla extract, and orange juice. Cook over medium heat until boiling.
- Reduce heat and stir occasionally until thickened (about 15–20 minutes). Set aside to cool.
- Spread mayonnaise on one side of each slice of bread. Layer Brie on unbuttered side of one slice, followed by raspberry compote and cheese slices.
- Top with the second slice of bread (mayonnaise side out) and grill on medium heat for about 3–4 minutes per side until golden brown.
