  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup orange juice
  • 2 slices sourdough or French bread
  • 2 tablespoons mayonnaise
  • 2 ounces Brie cheese (about 4 tablespoons), at room temperature
  • 4 slices manchego, white cheddar, or provolone cheese
  • Fresh raspberries for garnish

Instructions

  1. In a small saucepan, combine raspberries, sugar, vanilla extract, and orange juice. Cook over medium heat until boiling.
  2. Reduce heat and stir occasionally until thickened (about 15–20 minutes). Set aside to cool.
  3. Spread mayonnaise on one side of each slice of bread. Layer Brie on unbuttered side of one slice, followed by raspberry compote and cheese slices.
  4. Top with the second slice of bread (mayonnaise side out) and grill on medium heat for about 3–4 minutes per side until golden brown.
