  • 2 large lamb shanks
  • 1 large onion, chopped
  • 3 stalks celery, chopped
  • 2 carrots, chopped
  • 8 garlic cloves, minced
  • 1 cup fresh plum tomatoes, chopped
  • 4 cups chicken stock
  • 1 large bunch fresh rosemary
  • 1 small bunch thyme
  • 2 cinnamon sticks
  • 3 bay leaves
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste

Instructions

  1. Prepare all ingredients by chopping the vegetables and mincing the garlic.
  2. In a Dutch oven over medium-high heat, sear seasoned lamb shanks until browned on all sides (about 4-5 minutes).
  3. Remove lamb and sauté onions, carrots, celery, and garlic in the same pot until softened (about 5 minutes). Stir in smoked paprika and ground cumin.
  4. Return lamb to the pot and add chicken stock until partially submerged. Mix in tomatoes, cinnamon sticks, herbs, and optional red pepper flakes.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 2 hours until meat is tender.
  6. Discard bay leaves and cinnamon sticks before serving.
