- 2 large chicken breasts

- Salt & pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 medium onion (chopped)
- 3/4 cup low-sodium chicken broth
- 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese (softened)
- Optional: Chopped parsley for garnish
Instructions
- Slice the chicken breasts in half lengthwise and season with garlic powder, salt, and pepper.
- Heat olive oil and butter in a skillet over medium-high heat; cook the chicken for about 5-6 minutes on each side until cooked through. Remove from skillet.
- In the same skillet, sauté chopped onions until softened.
- Add chicken broth and Boursin cheese to create a smooth sauce; let simmer for 5 minutes.
- Return chicken to the skillet, allowing it to warm in the sauce for a few minutes before serving.
