Ingredients

For the Noodles
1 lb. Mafaldine noodles (or fettuccine/linguini noodles)

For the Chicken
3 chicken breasts
4 tablespoons olive oil
4 tablespoons blackened seasoning, divided

For the Sauce
6 tablespoons butter
6–8 cloves garlic, minced
2 cups heavy whipping cream
1.5 cups shredded Parmesan cheese
Salt and pepper to taste

Seasoning Mix (for Blackened Chicken)
2 tablespoons smoked paprika (or regular paprika)
1 tablespoon cayenne pepper
1 tablespoon onion powder
2 teaspoons garlic powder
1 teaspoon ground black pepper
1 teaspoon salt
½ teaspoon dried thyme
½ teaspoon dried oregano

Optional Serving Suggestions
Garlic bread, Texas toast, or garlic knots

Instructions

  • Cook the noodles according to package instructions. Drain and set aside.
  • Preheat a large skillet over medium-high heat and add 2 tablespoons of olive oil.
  • Combine the blackened seasoning ingredients (paprika, cayenne, onion powder, garlic powder, black pepper, salt, thyme, oregano) in a small bowl.
  • Season the chicken breasts with 2 tablespoons of the prepared blackened seasoning on both sides.
  • Add the chicken to the skillet and cook for 6–8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through. Remove from skillet and let rest for 5 minutes before slicing.
  • In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant.
  • Pour in the heavy cream and bring to a gentle simmer. Cook for 3–4 minutes, stirring occasionally, until slightly thickened.
  • Stir in the Parmesan cheese until smooth and creamy. Season with salt and pepper to taste.
  • Toss the cooked noodles in the Alfredo sauce until well coated.
  • Slice the cooked chicken and place on top of the noodles. Sprinkle with the remaining 2 tablespoons of blackened seasoning if desired.
  • Serve immediately with garlic bread, Texas toast, or garlic knots.
