Ingredients
- 1 ½ cups chocolate cookie crumbs
- ¼ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 can (21 oz) cherry pie filling
Instructions
- Preheat oven to 325°F (160°C) and line a 9×9-inch baking pan with parchment paper.
- In a mixing bowl, combine chocolate cookie crumbs, melted butter, and sugar. Press into the bottom of the prepared pan for the crust.
- In another bowl, beat cream cheese until smooth. Gradually add sugar and mix in eggs one at a time. Stir in vanilla extract until creamy.
- Pour cheesecake mixture over the crust and bake for 45-50 minutes or until slightly jiggly in the center. Cool completely then chill for at least 4 hours.
- Once chilled, top with cherry pie filling before slicing into squares.
