  • ¼ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 can (21 oz) cherry pie filling

Instructions

  1. Preheat oven to 325°F (160°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a mixing bowl, combine chocolate cookie crumbs, melted butter, and sugar. Press into the bottom of the prepared pan for the crust.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar and mix in eggs one at a time. Stir in vanilla extract until creamy.
  4. Pour cheesecake mixture over the crust and bake for 45-50 minutes or until slightly jiggly in the center. Cool completely then chill for at least 4 hours.
  5. Once chilled, top with cherry pie filling before slicing into squares.
