- 1 ½ cups graham cracker crumbs
- 2 tablespoons granulated sugar
- ⅓ cup unsalted butter, melted
- 32 ounces cream cheese, softened
- 1 ¼ cups granulated sugar
- ½ cup sour cream
- 2 teaspoons vanilla extract
- 5 large eggs
- ½ cup rainbow jimmies
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press into the bottom of a springform pan.
- Beat softened cream cheese until smooth in a mixing bowl. Gradually add sugar and mix until creamy.
- Stir in sour cream and vanilla extract. Add eggs one at a time, mixing well after each addition. Fold in rainbow jimmies.
- Pour filling over crust and bake for about 60 minutes or until slightly wobbly in the center. Turn off the oven and let it sit inside for an hour.
- Cool at room temperature before refrigerating for at least 4 hours or overnight. Serve topped with whipped cream and extra sprinkles.
