  • 32 ounces cream cheese, softened
  • 1 ¼ cups granulated sugar
  • ½ cup sour cream
  • 2 teaspoons vanilla extract
  • 5 large eggs
  • ½ cup rainbow jimmies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press into the bottom of a springform pan.
  3. Beat softened cream cheese until smooth in a mixing bowl. Gradually add sugar and mix until creamy.
  4. Stir in sour cream and vanilla extract. Add eggs one at a time, mixing well after each addition. Fold in rainbow jimmies.
  5. Pour filling over crust and bake for about 60 minutes or until slightly wobbly in the center. Turn off the oven and let it sit inside for an hour.
  6. Cool at room temperature before refrigerating for at least 4 hours or overnight. Serve topped with whipped cream and extra sprinkles.
