  • 2 large baking potatoes
  • 1 block (200g) feta cheese
  • 2 tbsp olive oil
  • 1 head of garlic
  • Fresh basil
  • 1 lemon
  • 1 tbsp honey
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes

Instructions

  1. Preheat your oven to 200C (390F).
  2. Cube the washed potatoes and par-boil them for 6-8 minutes. Drain and let steam dry.
  3. Toss potatoes with olive oil, thyme, oregano, salt, and pepper in a baking dish.
  4. Wrap the garlic head in foil and place it with the potatoes.
  5. Roast for 30-40 minutes until golden brown.
  6. Add feta cheese to the center of the dish with lemon juice on top; roast for an additional 15 minutes.
  7. Combine roasted garlic with potatoes before serving.
