- 2 large baking potatoes
- 1 block (200g) feta cheese
- 2 tbsp olive oil
- 1 head of garlic
- Fresh basil
- 1 lemon
- 1 tbsp honey
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 0.5 tsp red chili flakes
Instructions
- Preheat your oven to 200C (390F).
- Cube the washed potatoes and par-boil them for 6-8 minutes. Drain and let steam dry.
- Toss potatoes with olive oil, thyme, oregano, salt, and pepper in a baking dish.
- Wrap the garlic head in foil and place it with the potatoes.
- Roast for 30-40 minutes until golden brown.
- Add feta cheese to the center of the dish with lemon juice on top; roast for an additional 15 minutes.
- Combine roasted garlic with potatoes before serving.
