Ingredients
- 2 salmon fillets (150-180g each)
- 1 tsp Cajun seasoning
- 3 tbsp olive oil
- 2 cups baby potatoes, halved
- 2 cloves garlic, minced
- 1 bunch asparagus, trimmed
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Toss halved baby potatoes in olive oil, minced garlic, salt, and pepper. Spread on a baking tray and roast for 25-30 minutes until golden.
- On a separate tray or part of the same tray, place the trimmed asparagus, drizzle with olive oil, season with salt and pepper, then bake for about 12-15 minutes. In the last five minutes of cooking, top with shredded cheese to melt.
- While veggies are roasting, season the salmon fillets with Cajun seasoning and olive oil. Bake alongside the vegetables for about 12-15 minutes or until cooked through.
- Serve hot by layering crispy garlic potatoes, cheesy asparagus, and salmon on a plate.
