  • 2 salmon fillets (150-180g each)
  • 1 tsp Cajun seasoning
  • 3 tbsp olive oil
  • 2 cups baby potatoes, halved
  • 2 cloves garlic, minced
  • 1 bunch asparagus, trimmed
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss halved baby potatoes in olive oil, minced garlic, salt, and pepper. Spread on a baking tray and roast for 25-30 minutes until golden.
  3. On a separate tray or part of the same tray, place the trimmed asparagus, drizzle with olive oil, season with salt and pepper, then bake for about 12-15 minutes. In the last five minutes of cooking, top with shredded cheese to melt.
  4. While veggies are roasting, season the salmon fillets with Cajun seasoning and olive oil. Bake alongside the vegetables for about 12-15 minutes or until cooked through.
  5. Serve hot by layering crispy garlic potatoes, cheesy asparagus, and salmon on a plate.
