  • 2 teaspoons red chili powder (to taste)

  • 2 tablespoons oil (vegetable or mustard)
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1.5 lbs beef chuck, cut into bite-sized pieces
  • 1 large tomato, pureed
  • 1 tablespoon tomato paste
  • 1 cup beef broth or water

Instructions

  1. In a small bowl, mix coriander, cumin, turmeric, paprika, red chili powder, and garam masala to create the spice blend.
  2. Heat oil in a large deep pan over medium heat. Sauté onions until golden brown (about 10 minutes). Add garlic, ginger, and optional dried chilies; cook until fragrant.
  3. Increase heat to medium-high and sear beef for about 5-7 minutes until browned.
  4. Add the spice mix to the beef and toast for about 30 seconds.
  5. Stir in pureed tomato, tomato paste, salt, black pepper, and vinegar; cook for about 5 minutes.
  6. Pour in broth or water, bring to a boil then reduce heat to low. Simmer gently for 60-75 minutes.
  7. Taste and adjust seasoning before garnish with fresh cilantro.
