  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated white sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled, cored and cut into 1/2 inch pieces)
  • 1/3 cup brown sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a 9 x 4 inch baking tin and line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then whisk in vanilla.
  4. Gradually fold half of the dry mixture into the wet batter, followed by buttermilk. Finish by adding the remaining flour mixture until just combined.
  5. In a small bowl, toss diced apples with brown sugar and cinnamon until coated.
  6. Pour half of the batter into the loaf tin, layer with half of the apple mixture, swirl gently with a knife, then repeat with remaining batter and apples.
  7. Bake for 55-65 minutes or until golden brown; cover with foil if browning too quickly.
  8. Let cool in the pan for 10 minutes before transferring to a cooling rack.
