Ingredients
- 1 3/4 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup butter (room temperature)
- 3/4 cup granulated white sugar
- 2 large eggs (room temperature)
- 3/4 cup buttermilk
- 2 teaspoons vanilla extract
- 2 medium apples (peeled, cored and cut into 1/2 inch pieces)
- 1/3 cup brown sugar
- 1 tablespoon cinnamon
Instructions
- Preheat your oven to 350°F (180°C). Grease a 9 x 4 inch baking tin and line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon; set aside.
- In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then whisk in vanilla.
- Gradually fold half of the dry mixture into the wet batter, followed by buttermilk. Finish by adding the remaining flour mixture until just combined.
- In a small bowl, toss diced apples with brown sugar and cinnamon until coated.
- Pour half of the batter into the loaf tin, layer with half of the apple mixture, swirl gently with a knife, then repeat with remaining batter and apples.
- Bake for 55-65 minutes or until golden brown; cover with foil if browning too quickly.
- Let cool in the pan for 10 minutes before transferring to a cooling rack.
