Instructions

  1. Reduce apple cider in a saucepan over medium heat until it measures about 1/4 cup; set aside.
  2. In a bowl, mix cold cream cheese with sugar and vanilla until smooth for the filling.
  3. In another bowl, cream butter and sugars together, then add egg yolks.
  4. Gradually incorporate flour, baking powder, baking soda, salt, and spices; stir in reduced apple cider.
  5. Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined sheets, press cheesecake filling into the center and cover with more dough.
