- 2 cups apple cider
- 3 tbsp granulated white sugar
- 1 ¾ cups all-purpose flour
- 2 ½ tsp ground cinnamon
- 6 oz cream cheese
- ¾ cup unsalted butter
- 2 egg yolks
- 1/2 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp vanilla
Instructions
- Reduce apple cider in a saucepan over medium heat until it measures about 1/4 cup; set aside.
- In a bowl, mix cold cream cheese with sugar and vanilla until smooth for the filling.
- In another bowl, cream butter and sugars together, then add egg yolks.
- Gradually incorporate flour, baking powder, baking soda, salt, and spices; stir in reduced apple cider.
- Preheat oven to 350°F (175°C). Scoop dough onto parchment-lined sheets, press cheesecake filling into the center and cover with more dough.
- Bake for about 11 minutes or until edges are golden.
