- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1 medium Granny Smith apple, thinly sliced
- 4 oz light Brie cheese, sliced
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 1 tbsp creamy Dijon mustard
- 1 tsp whole grain Dijon mustard
- Salt, pepper, and dried thyme to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Using a sharp knife, slice each chicken breast horizontally to create a pocket.
- Stuff the pockets with apple slices and Brie cheese.
- Season both sides of the chicken with salt, pepper, and thyme.
- Heat olive oil in a skillet over medium-high heat; sear chicken for 1-2 minutes on each side until golden brown.
- In a small bowl, whisk together maple syrup and mustards; brush over the tops of the chicken.
- Transfer to the oven and bake for 20-25 minutes or until fully cooked.
