  • 2 cups chilled mashed potatoes
  • 1 cup shredded mozzarella or cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 beaten egg
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs (panko or regular)
  • Cooking spray or a little olive oil

Instructions

  1. If you don't have chilled mashed potatoes ready, prepare them in advance and let cool in the fridge.
  2. In a mixing bowl, combine chilled mashed potatoes, shredded cheese, grated Parmesan, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Scoop out about 1 tablespoon of the mixture and roll it into a ball; repeat until all mixture is used.
  4. Roll each ball in breadcrumbs until evenly coated.
  5. Preheat air fryer to 375°F (190°C). Lightly spray potato balls with cooking spray or drizzle olive oil on top. Arrange in a single layer in the air fryer basket.
  6. Cook for 8-10 minutes until golden brown and crispy.
  7. Allow to cool slightly before serving with your favorite dipping sauce.
