Ingredients
- 2 cups chilled mashed potatoes
- 1 cup shredded mozzarella or cheddar cheese
- ½ cup grated Parmesan cheese
- 1 beaten egg
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper to taste
- 1 cup breadcrumbs (panko or regular)
- Cooking spray or a little olive oil
Instructions
- If you don't have chilled mashed potatoes ready, prepare them in advance and let cool in the fridge.
- In a mixing bowl, combine chilled mashed potatoes, shredded cheese, grated Parmesan, beaten egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Scoop out about 1 tablespoon of the mixture and roll it into a ball; repeat until all mixture is used.
- Roll each ball in breadcrumbs until evenly coated.
- Preheat air fryer to 375°F (190°C). Lightly spray potato balls with cooking spray or drizzle olive oil on top. Arrange in a single layer in the air fryer basket.
- Cook for 8-10 minutes until golden brown and crispy.
- Allow to cool slightly before serving with your favorite dipping sauce.
