- 1 cup mashed very ripe banana (about 2-3 small bananas)
- ½ cup shredded apple (about 1 small apple)
- ¼ cup shredded carrot (about 1 small carrot)
- ¾ cup milk
- ¼ cup melted unsalted butter (slightly cooled)
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 cup whole wheat flour
- ½ cup rolled oats
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ⅛ teaspoon salt
Instructions
- Preheat your oven to 375°F (190°C) and grease a mini muffin pan.
- In a medium bowl, mix together the mashed banana, shredded apple, shredded carrot, milk, melted butter, egg, and vanilla extract until well combined.
- Gently fold in the whole wheat flour, rolled oats, cinnamon, baking powder, baking soda, and salt until just mixed.
- Divide the batter evenly among the muffin cups.
- Bake for about 16-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool slightly before transferring to a wire rack.
