  • 1 cup mashed very ripe banana (about 2-3 small bananas)
  • ½ cup shredded apple (about 1 small apple)
  • ¼ cup shredded carrot (about 1 small carrot)
  • ¾ cup milk
  • ¼ cup melted unsalted butter (slightly cooled)
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup whole wheat flour
  • ½ cup rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ⅛ teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin pan.
  2. In a medium bowl, mix together the mashed banana, shredded apple, shredded carrot, milk, melted butter, egg, and vanilla extract until well combined.
  3. Gently fold in the whole wheat flour, rolled oats, cinnamon, baking powder, baking soda, and salt until just mixed.
  4. Divide the batter evenly among the muffin cups.
  5. Bake for about 16-20 minutes or until a toothpick inserted comes out clean.
  6. Allow to cool slightly before transferring to a wire rack.
